Chilled Cantaloupe Gazpacho
Vegan - Raw - Alkaline - Sugar Free - Gluten Free - Grain Free - Anti Inflammatory
- 1 Melon Chopped into chunks (Cantaloupe is Preferred)
- 1/2 English Cucumber Peeled and Chopped
- 1/2 Serrano Pepper Seeded and Diced
- 2 Tbl Extra Virgin Olive Oil
- Zest and Juice of 2 Limes
- Pinch of Curry Powder (Optional)
- 1/4 tsp Fine Sea Salt (taste at the end for seasoning)
- 1/8 tsp Fresh Ground Black Pepper
- Chopped Cilantro and Mint
- Drizzle of Extra Virgin Olive Oil
- In a blender add the chopped melon, cucumber, serrano, olive oil, zest and juice of the limes and the salt and pepper.
- Blend until smooth.
- Taste for seasoning.
- Chill for 30 minutes but can be eaten right away.
Optional Add Ins
- 2 Tbl Chopped Sweet Onion
- 1/2 Cup Cherry Tomatoes
- 1/2 Avocado
