Greek Salad Bites

Vegetarian - Gluten Free - Grain Free - Sugar Free - Appetizer

Makes 20-24 depending on the size of the cucumber


  1. 1 Cucumber sliced into 1/4'' rounds
  2. 1/3 c French Goat Milk Feta (or your feta of choice)
  3. 12 Kalamata Olives, quartered
  4. 6 Cherry Tomatoes, quartered
  5. 20-25 Parsley leaves
  6. Freshly Ground Pepper


  1. Lay the sliced cucumbers on a serving plate and on each cucumber place 1/4 piece of tomato, 2 pieces of 1/4 olives, and tuck a piece of parsley underneath the tomato to stay in place. 
  2. Crumble the goat cheese all over the top and generously finish with freshly ground pepper.
